Recipe for Yummy Lemon Squares...

What do you give an injured lemon? Why Lemonaid of course! Da dum dum! (Sorry! Couldn't help myself!)

Had some wonderful lemon juice in need of use and so I scoured my family recipe book and came up with these. They were a favorite of mine as a child and one of those things my mother made that brings back fond memories.

Lemon Squares


1 cup butter
2 cups flour
1/2 cup powdered sugar
1/2 tsp. salt
4 eggs, slightly beaten
2 cups sugar
1/4 cup flour
1/2 tsp. baking powder
6 Tbs. lemon juice
1 Tbs. lemon rind (omitted here)

Blend first four ingredients as for pie dough. Press into cookie sheet or 9 x 12 pan. Bak at 350 degrees for 20 minutes or until golden brown.

Combine eggs, sugar, flour and baking powder. Add lemon juice and rnd. To the baked crust with lemon mixture and bake 20-25 minutes until light brown. Cool slightly and sprinkle with powdered sugar.

  7. oh! I love these, but I never make them because my husband isn't a fan of lemon. I wish he was! (But I may just have to make them one day anyway!)
